Black peppercorn, well-known since Ancient times, is incredibly popular and is considered as the "king of spice". Its strong pungent flavour comes from the volatile-oils such as piperine which may disappear once grounded into powder form due to evaporation if kept open in the air for too long.
Black pepper is truly versatile and is used in virtually all kinds of savoury cooking. Black peppercorns togeether with other spices and seasonings are often used for marinating fish, chicken and meat before cooking. This top spice is also used liberally in Indian chicken and vegetarian curries as well as meat and rice dishes. They are also added to soups, pickling, barbecue sauces and as a main ingredient in a variety of curry powders, the most famous one being Indian garam masala powder.
